Chocolate Mug Cake

You might have noticed I have started a collection of blogs/sites over on the right... so many of them were about recipes that a few weeks ago I gave them their own list.... a lot of them have a lot of different types of cakes on them. Cake is a weakness around here so I have been trying a few of them out. Tried the chocolate covered cake balls awhile ago and everyone loved them. The other day I saw this chocolate cake you can make in 5 minutes in a mug in the microwave.... yeah whatever.. no way would that be any good so I kept flipping... and then there it was again on a different site.... hmmm recipe was a bit different but the pictures were not as good... I kept looking around and did not think much more about it. Well tonight it is late and it is going to be a long night so I thought it would be nice to make a little quick snack... tomorrow is grocery shopping day so the cupboards are rather bare... and I dont want to make too much as if there is a whole cake.. we will eat a whole cake.. tends to happen.... so I remembered the chocolate mug cake. Figured I would give it a try. It was so quick and so easy and it taste really good. A thick dense chocolate cake with some frozen coolwhip on top. This will be made again. I made one in a big mug and split it with Dave.. it was plenty.

recipe

mix together.. right in the mug

4 TBSP each of flour and sugar add 2.5 TBSP of Cocoa and mix well

add in one egg and 3 TBSP of milk and 3TBSP of oil and mix it well.

put it in the microwave and cook it on high for 3.5 minutes

top it with some whip cream, icecream or cool whip and enjoy.


*update* I noticed in the comments that microwavemugcakes added a link and WOW.. I never would have dreamed there was a whole site and a whole book now with recipes for more cakes in a mug... I notice on the link that there are some more recipes to try under the blog link too. Seems the one I did was very basic and I can not wait to try some more. A friend of mine CrypticFragments is traveling in India until next October. She has this great blog ( Sacred Sojourns )

I have not travled outside of the states.. in fact I have only traveled a very small amount in the states. Today the neighbor called me up and said.. "put your shoes on lets go for a walk" so off we went with her cute little dog for a walk on the beach. Christmas is coming

I am trying to be patient and not doing so well.. I really want to decorate and start baking and I am looking for snow ( yet hoping we don't get any too soon ) I am ready for Christmas. We did buy our first present... most years we want until Christmas eve. It is a sweet little nutcracker snow globe for MIL.. I have it sitting on the counter ( will move it when she visits ) but my problem is when I get things early I end up hiding them away and then forgetting about them :( My son will be home for thanksgiving from the academy and my family are coming up.. so I really want to wait until after that to decorate for Christmas.. that way it is decorated for thanksgiving and then when he comes home on the 19th of December he can help decorate for Christmas.. but this is so hard waiting. When do you decorate... when do you shop.... when do you start your baking? Listening to holiday music yet? I am :)

Happy Halloween

Today was wonderful... lazy... restful.. peaceful.. and just great. I did not make anything spooky for dinner... in fact we did not even have dinner yet ( 9 pm ) and I think we will be skipping it since we had a late lunch. We slept in late and then spent the day cleaning... turned on some good tunes and got to work....... all of the stuff that we brought home from my MIL's has now been sorted and put away. All the floors were cleaned and the kitchen got a good going through.. the kind where everything comes off the counter and gets cleaned good. Daughter and I were just going to clean up a little and one thing led to another and things that had been piling up or getting pushed aside have now been put away or thrown out. While we were out working in the kitchen and living room it turns out Dave was back in the bedroom getting the master bath all cleaned up and the bedroom cleaned up. He also got my new computer all loaded up with windows 7 and some other things... tomorrow I need to get the new office for it and a couple of other things and then hopefully by tomorrow night I will be working on the new system. We did end up putting up a few decorations in the yard for halloween... some pumpkin lights and strobe lights that make a witchy scream... we went through a 4 lb bag of candy... most of it was even given to trick or treaters. I have to say... I really want to start to decorating for christmas... but am going to try so hard to wait until after thanksgiving...am going to try to stick to the fall theme until then. lol I already know I am not going to make it. When do you decorate for christmas? Start listening to christmas music? Have all your shopping done?

Gross Halloween Dinner Idea

I was stumbling around today online and came across this great idea for dinner on Halloween night. I am going to let my daughter invite her boyfriend over to hang out on Saturday and watch scary movies and pass out candy to the neighborhood kids...was thinking we would just get a couple of pizzas but am now thinking I might make a scary gross dinner for them... think I am going to try making them individual size so that I can dish up a plate for each of them and then serve them up.

For some reason I am having a hard time coming up with blog posts these days.. I think because most of what is happening in my life is not really stuff I think anyone wants to hear about.. so I am going to do a short (I hope) wrap up on what has been happening with us.

All of the computers are getting upgraded.. Dave needs to do his about every 3 years due to the program he uses for work will just not work well with the older computers.. which spoils me because I get his old one.. which is so much more computer than I will ever need... even going to get two screens.. lol and new keyboard and mouse.. both wireless.. yeah :) The extra one we are going to hook up to the entertainment center full time... yes I will be twittering in the living room on the projection screen... wohooo.

Spent the last weekend moving the MIL into a nursing home... talk about emotional... I think she will like it if she can hang on for a bit and get used to it. I have to say this is a nice place.. she was able to bring her china hutch and fill it with her collections.. so she does have some of her stuff there.. there are only 2 people per room. Some of the places we found had three people in a room and most of the place no one was allowed to bring anything personal. It is really close to home so the kids can stop in and visit and we can swing by for lunch of just to say hi a lot more often. Used to take us over an hour each way... now it is like less than 10 minutes. Plus her doctor appointments will all be in the home.. so no more hurry up and get to a doctors so we can wait 40 minutes for a 5 minute appointment.

health wise... everyone is doing good.. daughter is still very aware if she over does it... and yet. she still tried to talk me into letting her wrestle at school this year... the answer is No!! We heard there is the swine flue started around school.... I just keep telling the kids.. wash your hands wash your hands wash your hands.... and do not touch your face! I learned that on December 4th I am going to a doctor for a 5 hour appointment where he will take me through a bunch of things to decide how much it has healed and what issues I am still having with it. We shall see what he says... I had hoped it would be doing better than it is... it is better since the surgery.. so that is good.. but it is not back where it was before the accident. I know it takes awhile.. but it has been awhile.. and I am tired of it hurting. Tired of how it influences my life and what I can do and how much I can do.

Daughter has a boyfriend... they are so cute... he seems like a really nice guy. Went and meet his parents and I have to say.. it is really nice to find another family that cares where their children are and what they are doing with who. I am just amazed these days how many parents of teenagers do not even seem to care... I still expect my children to call me and let me know where they are and what they are doing and who with... even my 20 year old... he is not asking permission.. but being respectful and safe.... daughter still needs permission for most things.. but even things she knows she can do.. she needs to let me know.

Crafty stuff... well... I making the run from the plastic bags... this is a lot of fun... ran out of the pink bags so it was put on hold for awhile.. now I have a few more so I can finish it up. When we moved MIL I brought all of her crafty stuff home.. I am talking hundreds of knitting needles and crochet hooks and pattern books and yarn and sewing stuff... I have been sorting it out and will take a craft box to her at the home and will get one set up here at the house for when she visits. She does not ever use this stuff.. but she is able.. if I get it started and put it in her lap she will do it without thinking. She has shown me some fun stuff with knitting.. I am hoping to learn a few more tricks from her :)


This weekends plan is to stay home as much as possible.. will possibly have to run to the computer store and do an exchange on some of the software or something.. I am not sure.. don't speak computer. We are working on getting ready for thanksgiving.. I know it is a little early.. but... I get to have my son home from the academy for a week.. and my parents are coming up for it... I am excited and happy... looking forward to getting to spend a little time with him... we are going to do his birthday at the same time.. since it is the first week of December and he will be in the academy then.

That is my short version... I know.. even when typing I talk too much.... thankfully it is a blog and you can pick through and read what you want... and skip everything you do not care about.

Chocolate Covered Cake Balls



These equal heaven... saw a link to a website called Bakerella and as soon as the page opened I fell in love... so many things I want to try from that site. She has Great photos and explains how to do things wonderfully... lots of fun to read through the comments and get some hints and hear how everyones attempts turn out. The first thing my daughter and I have tried making are the cake balls... and everyone loves them... so we decided to try a few more and make each batch a bit different... first ones were just chocolate cake and chocolate frosting.. next batch I made using mint brownies... they were good.. but not Great... moved on to chocolate cake with peanut butter dipped in chocolate... oh wow.. those are my all time favorites right now...(neighbor boy says they taste like the reese peanut butter cups) Next we did a batch with chocolate cake and very strong coffee... these just got finished today and they are a very close second if not a tie for the peanut butter ones... Neighbor has suggest using coconut in a batch and I want to do a batch with a walnut in the middle....you can also use white cake and white chocolate to dip in..so many possiblities.. endless really! (family and close friends dont read this next part) We are planning on making a bunch of these up for christmas presents.. buy some cute candy boxes and little paper cups... each type of cakeball will have a different sprinkle on top... it is a great mother daughter type project.. and the guys and neighbors have loved being the sample tasters :) Be sure to check out the great website where I found this wonderful, fun, super easy recipe... you can get there by clicking right here Bakerella Cakeballs Don't forget to look around once you are there... so many wonderful things.

My kids

Today we went and visited my youngest son at the acadamy. It was so great to see him.... lots of emotions for me... I laughed until I cried and cried until I laughed. I am so proud of him and seeing him there all in uniform and doing their thing.. it was so awesome...ever since he was a tiny little boy he has been marching around pretending to be in the military and to see him going from a 2 year old pretending to a young man taking his first steps into the adult world makes me feel so many things.. so happy that is on a road that is clearly a good place for him... so sad that he has grown up so fast... it seems as if they just putt along getting older and then you blink and you have missed huge stuff. I know that each time the kids turned 10 I found myself wishing they could go back to 5 and start there so I could catch up.. now as they hit 18 I find myself wishing the same thing... It is hard to let them go.. even though I know they are still here.. lol one of them still lives at home.. but to let them decide their own lives and to make their own mistakes... I sit and watch them.. the good things they decide and the bad... and know that they need to do this. Being a parent is hard... and never have the things people warned me about.. the food they would eat or the money they would cost.. have ever been an issue...just watching them grow and learn.. it is the best and the worst of being a parent.
